A lot of us were excited to get the new 2017 Potatoes (an acronym for “All American Potatoes”) from Kroger and other grocery stores this past weekend.
I wasn’t, but this is a great time to revisit a topic I’ve long avoided: the nutritional value of potatoes.
Here are some reasons to get your potatoes and your mind open.
Potatoes are healthy.
I know, I know: they’re supposed to be bad for you.
But I’ve had potato allergies, so I’m not alone.
And this isn’t just a problem for people who suffer from celiac disease.
As a result, I’ve become a potato junkie myself.
It’s important to eat as many healthy foods as possible when you’re in the market for a new food.
You’re not going to eat more than you need, right?
So I’ve been following the recommendations of nutritionists and eating my fair share of whole grains, whole fruits, vegetables, and even some nuts and seeds.
I’ve found that, overall, a lot of the foods I love are still good for me, and there’s plenty of good variety in the potato world.
Potato salad dressing makes a great snack.
I don’t know if I’m a potato-loving, salad-eating super-foodie or just a pretty-girl type of girl, but when I’m craving a hearty, hearty salad dressing to go with a healthy potato salad, I always have my fingers crossed.
And while I’m usually fine with just adding some salt to the dressing and tossing it in the oven to cool, it’s also good to add in a little bit of olive oil to bring out the flavor.
I’m also not a fan of the salty potato salad dressing I’m used to.

It doesn’t take long to make a great meal.
That’s a big part of it.
I’ll typically go for a potato salad with a light, light dressing, like a green salad, but there’s nothing stopping me from adding in a veggie or even a protein-rich dressing to the mix.

And, if you have some leftover cooked rice from a meal, it can be tossed in to replace the whole thing.

And there’s a whole lot of variety in this kind of dish, so you’re never going to go wrong.
Potatos are super versatile.
You can eat a few of these with a salad, and then add them as an ingredient to a meatless meal, a meaty appetizer, or a hearty side dish.
Just make sure you’re not adding any starch or any additional sugars, or you’re going to end up with a very messy meal.
It may seem a little hard to keep track of what’s in a dish, but with a little planning, you’re probably going to be surprised with what you end up eating.

I find that I can mix it up with other ingredients, like chicken, avocado, potatoes, or even beans, for a more satisfying and healthy meal.
